Ingredients
For the Fries:
- 4 large russet potatoes
- 3 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried oregano
- 1/2 tsp black pepper
- 1/2 tsp salt
For the Parmesan Coating:
- 1/2 cup grated Parmesan cheese (use the good stuff!)
- 2 tbsp fresh parsley, chopped
- 1 clove garlic, minced
- Zest of 1 lemon (optional, for a bright kick)
For Dipping (Optional):
- Ketchup, garlic aioli, or ranch dressing
Instructions
1. Prep the Potatoes:
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a wire rack.
- Scrub the potatoes clean and cut them into thick wedges (6-8 wedges per potato, depending on size).
2. Parboil for Extra Crispness:
- Bring a large pot of salted water to a boil. Add the potato wedges and parboil for 5 minutes.
- Drain and let them cool slightly. This step helps create the perfect crispy texture!
3. Season and Bake:
- In a large bowl, toss the potato wedges with olive oil, smoked paprika, garlic powder, onion powder, oregano, black pepper, and salt. Make sure they’re evenly coated.
- Arrange the wedges in a single layer on the prepared baking sheet, ensuring they aren’t overcrowded.
- Bake for 20 minutes, flip the wedges, and bake for another 15-20 minutes, or until golden and crispy.
