Ingredients

For the Fries:

  • 4 large russet potatoes
  • 3 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp dried oregano
  • 1/2 tsp black pepper
  • 1/2 tsp salt

For the Parmesan Coating:

  • 1/2 cup grated Parmesan cheese (use the good stuff!)
  • 2 tbsp fresh parsley, chopped
  • 1 clove garlic, minced
  • Zest of 1 lemon (optional, for a bright kick)

For Dipping (Optional):

  • Ketchup, garlic aioli, or ranch dressing

Instructions

1. Prep the Potatoes:

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a wire rack.
  2. Scrub the potatoes clean and cut them into thick wedges (6-8 wedges per potato, depending on size).

2. Parboil for Extra Crispness:

  1. Bring a large pot of salted water to a boil. Add the potato wedges and parboil for 5 minutes.
  2. Drain and let them cool slightly. This step helps create the perfect crispy texture!

3. Season and Bake:

  1. In a large bowl, toss the potato wedges with olive oil, smoked paprika, garlic powder, onion powder, oregano, black pepper, and salt. Make sure they’re evenly coated.
  2. Arrange the wedges in a single layer on the prepared baking sheet, ensuring they aren’t overcrowded.
  3. Bake for 20 minutes, flip the wedges, and bake for another 15-20 minutes, or until golden and crispy.

4. Add the Parmesan Magic:

  1. While the fries are hot, transfer them to a large bowl. Add the Parmesan cheese, parsley, minced garlic, and lemon zest (if using). Toss until the fries are evenly coated in cheesy, garlicky goodness.

5. Serve and Devour:
